Don't get me wrong. I love a good guacamole, or a BLT with avocado (a BLAT?), or even the occasional sweet avocado pudding, which my mom used to make for me in lieu of ice cream when I was a child. But when you get that perfect avocado, you have to just eat it.
Use a sharp knife to cut the avocado in half. Carefully use the knife to pry the seed out. I set the knife parallel to the exposed surface of the avocado and use the sharp edge to push in and then up.
Make a lattice cut with the avocado, then season with some salt. I used Hawaiian black lava salt, which has a slightly smoky flavor. Kosher salt is also a nice choice - I recommend something with a large grain. Feel free to add some pepper as well. Then enjoy with a spoon!
